
This week we are back to our pretty regular life. The kids and I were home alone this weekend and spent some time baking some favorite cookies: snickerdoodles and chocolate crinkle cookies. Here are the recipes (both make about 3 dozen).
Snickerdoodles (recipe from my sister’s church cookbook)
1 c. butter – softened 2 tsp. cream of tarter
1 1/2 c. sugar 1/4 tsp. salt
2 eggs 2 3/4 c. flour
1 tsp. baking soda 2 tsp. cinnamon plus 2 TBSP. sugar
Cream together butter, sugar and eggs until light and fluffy. In another bowl, combine flour, cream of tartar, baking soda and salt. Add to creamed mixture and blend well. Refrigerate dough for 30 minutes. Combine cinnamon and sugar in a shallow dish. Shape dough into 1 inch balls and roll in sugar mixture. Place balls on a greased cookie sheet. Bake at 375 for 10 minutes.
Chocolate Crinkle Cookies
2 c. chocolate chips 6 TBSP. butter
1 1/2 c. flour 1 1/2 tsp. vanilla
1 1/2 tsp. baking powder 2 eggs
1/4 tsp. salt 1/2 c. powdered sugar
1 c. white sugar
Melt half of the chocolate chips and set aside. Beat together sugar, butter and vanilla and then add the melted chocolate. Add eggs 1 at a time. Add flour, baking powder and salt. Stir in remaining chocolate chips. Chill until firm. Shape into balls and roll in the powdered sugar. Bake at 350 for 10 minutes.
Here is our meal plan for the week:
Monday: take and bake pizza brought over by a friend
Tuesday: salad (with veggies, roasted chickpeas , shrimp, and hard boiled eggs) and cut up fruit
Wednesday: Lentil Tacos (these were on the menu last week but got pushed back - see the recipe on this post)
Thursday: Black Bean soup (this was also on last week’s menu - see recipe link on this post) with WHO bread - a Soulemama recipe
Friday: dinner at church
Saturday: Stracciatella with brown rice (a Martha Stewart recipe)
